Pumpkin Ramen / The Broth

What a bowl, this pumpkin ramen. They use the pumpkin just enough to make it feel like an Autumn ramen. Regardless of your sauce choice, the broth is light and clear, with a richness coming from high-quality Akita chicken.

Red Ginger Ramen / The Toppings

If you choose red ginger as your sauce (benishouga), you won’t be disappointed. The ginger really shines through, providing a delicate sweetness that compliments the broth.

You’ll also find a surprise in the soup – high-grade mochi (sticky rice cake) from Niigata!

Tsukemen / The Noodles

Their tsukemen is an unsung hero. They stick with the niboshi (dried fish) base for this one. As such, the broth is saltier but really not too heavy.
