Yuzu Lab in Akihabara: Yuzu Soupless Ramen That Actually Works

There are a handful of ramen shops in Tokyo that use yuzu. Usually, though, it shows up in a pretty familiar way. Maybe it’s floating in a refined shio broth. Maybe it comes as a few strips on top. Yuzu Lab Noodle Shop (Ramen) goes somewhere else with it.

Their signature bowl is a yuzu soupless tantanmen. On paper, it almost sounds like something that shouldn’t work well. Yuzu? In tantanmen? But once you eat it, it makes perfect sense.

A Bowl Built Around Contrast
The main pull here is the way different flavors stack up without fighting each other. The yuzu citrus brings acidity and fragrance. The sansho pepper brings that familiar numbing buzz. The raiyu chili oil brings heat. The niku (meat) miso and sesame bring richness and creaminess.

With all this going on, it's perhaps easy to forget about the yuzu. But the yuzu is really infused into the thick sauce. You get some shaved yuzu peel on top, sure, but the citrus is already worked into the bowl itself. And it's all delicious.

The thick noodles hold up well against the heavy sauce. The shop also uses its own in-house minced pork, which gives the bowl much of its savory backbone. The base also includes a Japanese-style dashi made with shiitake mushrooms. It's easy to miss this if you opt for a spicier bowl (choose from 0-3 for numbing pepper and spiciness levels).
Why Yuzu Lab Noodle Shop (Ramen) Stands Out
Yuzu Lab has become popular for a reason. The shop’s yuzu soupless tantanmen feels different, but not forced. It takes an ingredient that ramen fans already know well and pushes it in a new direction.
