Ayagawa Ebisu (full name: Teuchi Oyatori Chūkasoba Ayagawa / 綾川 本店) is a ramen shop that puts chicken at the center of everything. This Ebisu shop serves a full-bodied, old-hen-based broth that's pure chicken comfort in a bowl.

Ayagawa Ebisu - A Ramen Rooted in Craft

The name Ayagawa comes from a town in Kagawa Prefecture, known for its noodle-making tradition. The shop opened in late 2020, bringing that handmade, hands-on spirit to Tokyo.

Everything here revolves around oyadori - mature hens with firmer meat and deeper flavor. Their broth, chashu, and even the shimmering layer of chicken oil all come from these birds, giving each sip an earthy richness.


The Bowl

The soup glows gold. It’s robusy and chicken through and through - no shortcuts. You can choose between thick and even thicker noodles, both handmade with a bamboo-kneading method.

The thicker option feels almost like pizza dough or even bread - chewy, weighty, and wonderfully doughy. I'm personally more about the thick (thinner) noodles.

Toppings stay simple: firm oyadori chashu, bamboo shoots, negi, and an optional egg. Nothing fancy...but this is good.

For Ebisu, the shop feels spacious - with a few tables and warm wood tones that make it easy to settle in. Side dishes like the oyadori rice bowl or wasabi mini-don are small but satisfying, pairing with the ramen’s intensity.
