Ayagawa Ebisu - A Ramen Rooted in Craft
The name Ayagawa comes from a town in Kagawa Prefecture, known for its noodle-making tradition. The shop opened in late 2020, bringing that handmade, hands-on spirit to Tokyo.

Everything here revolves around oyadori - mature hens with firmer meat and deeper flavor. Their broth, chashu, and even the shimmering layer of chicken oil all come from these birds, giving each sip an earthy richness.

The soup glows gold. It’s robusy and chicken through and through - no shortcuts. You can choose between thick and even thicker noodles, both handmade with a bamboo-kneading method.

The thicker option feels almost like pizza dough or even bread - chewy, weighty, and wonderfully doughy. I'm personally more about the thick (thinner) noodles.

Toppings stay simple: firm oyadori chashu, bamboo shoots, negi, and an optional egg. Nothing fancy...but this is good.
