Yokohama might be best known for its rich iekei ramen, but Ishin Shoten (横浜中華そば 維新商店 本店) offers something refreshingly different. They serve an expertly crafted shoyu ramen that’s light yet deeply satisfying.

This place happens to be one of my personal favorites in Yokohama, and once you try it, you’ll see why. They're very close to Yokohama station.

Let’s start with the soup in their chuukasoba (ramen). Powered by a koikuchi shoyu (dark soy sauce) base, the broth is layered with warm chicken richness from whole birds, backed by the depth of pork back fat (seabura).

Chiyu (chicken oil) adds a fragrant lift. It’s a bowl that manages to be both delicate and full-bodied.

Now let’s talk noodles. They're truly special. Made by Aso Seimen, they’re high hydration, thick, wavy, and hand-pressed, with a wonderful chew and just enough bounce. These noodles are a major reason I keep coming back.

If you’re hungry, go all in with the full toppings. This includes:

• 3 pork dumplings

• 3 slices of chashu pork

• Naruto (fish cake)

• Menma (bamboo shoots)

• Spring onions

• A seasoned egg

It’s a glorious lineup, and the dumplings alone are worth the visit.

Lantern Outside

Not surprisingly, Ishin Shoten has landed a spot on Tabelog’s Top 100 Ramen list for East Japan every single year. This is a testament to their consistency and care.

If you’re exploring Yokohama and want ramen that balances elegance with comfort, Ishin Shoten delivers in every way.
