Niboshimania, Kamata — The Niboshi Ramen Shop Worth Going Back For

Kamata isn't short on niboshi (fish) ramen specialists, but Niboshimania has built a genuine cult following since opening near the station's west exit back in 2022. The menu here isn't one bowl — it rotates through different niboshi treatments depending on the day, so no two visits are quite the same.

I've written before about Hechikan in Yokohama, which is cut from a similar cloth — the owner trained there, and it shows in the ramen DNA.

There can be a fair wait outside

I went in and ended up trying two very different directions — one lighter, one considerably heavier.


The Lighter Bowl

This one was built around ginrin niboshi, a premium grade of dried sardine known for a cleaner, more refined fish flavor than what you get from standard niboshi.

Light Niboshi Ramen is available too

It came through as bright and savory rather than heavy-handed. The noodles here were firm, properly al dente, which gave the broth something to push back against instead of going soft and limp.


The Heavier Bowl

This is where things got serious. The broth was unmistakably niboshi-forward — smoky, a little bitter up front — but what stuck with me was the finish. Underneath all that dried fish intensity was a genuinely sweet seasoning that lingered well after the smoke and bitterness faded.

That's honestly my favorite way to eat niboshi ramen: get hit with the fish first, then let a stronger, sweeter tare take over as the aftertaste. Chopped raw white onion got tossed in here too, cutting through the richness and keep every bite from blurring into the last.

Both bowls, lighter and heavier, came topped with sous vide pork — soft, almost buttery.


Niboshimania among Kamata's Great Shops

Kamata is genuinely a niboshi battleground — Miyamoto and Wakaseimen are both a short walk away doing their own excellent versions, and that's before you even get to the Tsubame-Sanjo style backfat-and-niboshi hybrid at Jun.

If you're working your way through the neighborhood, Niboshimania is one where showing up more than once actually pays off — you're not getting the same bowl twice.
